Fish Masterclass

In Association with DAERA, Belfast Cookery School will deliver hands-on seafood Masterclasses directly to Home Economics Teachers. By targeting education it is believed that bottom-up demand for local seafood will be created from local consumers with better-educated chefs well placed to meet the demand.

Fish Cookery Class –

Theory:

To begin we shall talk about the seasonality of the fish, in particular, provincial species. We will then discuss the difference of round fish, flatfish and oily fish using examples of the above fish to do so.

We will discuss which fish is farmed and about farm-raised fish in general. Discussion of the health benefits of eating fish and seafood.

Practical:

Fillet a flat and round fish in detail and invite volunteers from the class to do so as well; Differences of flat and round fish and the pros and cons of cooking them; Demo how to remove fillets of a whole Gurnard and go on to cook a Gurnard dish accompanied by a Belfast Cookery School recipe sheet which the guests will then cook themselves. The menu will include a costing breakdown of every ingredient, a costing price, a selling price and a profit percentage which will be discussed.
